On 5 November 2025, the School of Agro-Industry at Mae Fah Luang University organized the AI-MFU Workshop 2025 to provide hands-on training in food science innovation and packaging technology for the transportation of agricultural products.
The workshop consisted of several practical learning activities, including:
Participants designed packaging boxes for egg transportation and tested their durability in terms of:
Vibration resistance
Impact protection from dropping
This activity demonstrated the application of packaging technology to agricultural products in order to increase product value and reduce potential damage during transportation.
The session was led by Asst. Prof. Dr. Rattapon Saengrayap and Asst. Prof. Dr. Rungarun Sasanatayart who provided in-depth knowledge and practical guidance.
Activity 1: CSI-MFU – Testing Acidity and Viscosity of Food
Participants used scientific instruments to measure acidity and viscosity, helping them understand how different components affect taste, nutritional value, and product quality in the food industry. : Speaker: Dr. Sirirung Wongsakul
Activity 2: Nutrition Label Reading and Energy Calculation
Students learned how to read nutrition labels and understand the caloric content of different food items, encouraging them to make healthier and more informed food choices. : Speakers: Asst. Prof. Dr. Suttiporn Pinijsuwan and Asst. Prof. Wantida Homthawornchoo.
These activities strengthened students’ practical skills in food science, nutrition, and quality control techniques, helping them develop knowledge that can be applied in daily life as well as in future studies.
