MFU School of Agro-Industry Organizes the 2nd STEM Education Workshop to Enhance Teachers' Capacity in Food Science through Hands-on Learning

On 17 July 2026, the School of Agro-Industry, Mae Fah Luang University (MFU), in collaboration with the Center for Academic Services, organized the "STEM Education for Enhancing Agri-Food Learning Project (2nd Edition)" at the Science Laboratory Building (S4-120). The workshop was funded by the Mae Fah Luang University Foundation for Rural Teacher Development.

The workshop aimed to strengthen the capacity of high school teachers by integrating Science, Technology, Engineering, and Mathematics (STEM) into agricultural and food education through a hands-on learning approach. Under the theme "Decoding the Mystery: The Leavening Agent Case," participants explored fundamental concepts of food science by applying scientific principles to bakery products.

Throughout the workshop, participants engaged in laboratory-based activities covering the functions and properties of various leavening agents, ingredient calculation and preparation, cookie production, and the observation of physical and chemical changes during the baking process. They also conducted sensory evaluation, recorded experimental results, and exchanged ideas on how to integrate these activities into classroom lesson plans to promote inquiry-based learning.

The project aligns with Mae Fah Luang University's Strategic Plan on Lifelong Learning (Strategy 1) and supports the United Nations Sustainable Development Goals (SDGs) by promoting innovative teaching approaches that enhance science education. The workshop is expected to empower teachers with practical STEM-based learning activities that can inspire students and strengthen science and mathematics education, particularly in rural communities.
